Single Dad's Awesome Life
I was born in Dallas Texas. In 2010 my father died. My mom raised me and my brother, but he is not here. So I have to wait until he comes back. But what a wonderful moment and experience I had as both of my parents are being brought back together. My mother works full-time and so she can't take care of us. It was really hard for her because she is always busy in some way with work or school or volunteering or anything else.
Then I came along to take the reins and help her out. She has taken so much time out of her days from trying to earn a living so that she can stay home to raise me, so I am now there all by myself. But at times she will come down and cook lunch, which I love. Then we go to the store to get groceries or even visit friends. That is when she gets to relax and enjoy that she did not start working 40+ hours per week already. That is one of the best parts. And she loves it when I tell her that I want to learn how to make cheese. Or any food for that matter. But this is another part that I never thought I would like doing. One day, at the store, I spotted an old box of chopped up vegetables and decided I wanted to try it, so I bought them off the shelf and brought them home and cut them into strips. But I didn't really know anything about cooking. This was during the school year in elementary school and I didn't really think anything about being able to cook for others. It is now that I have learned everything I need to know. What are your favorite things?
If you live alone I find cooking to be fun and entertaining. Who does it entertain or makes you happy? With my wife she has always been the best cook. When I'm not cooking I usually watch the news because I've always had such a bad attitude towards politics. I don't believe politicians make good policies because they don't know how to govern. That's why I am always on the web, reading news and watching videos of people who have their opinions on what makes your country great or not. I believe my own personal opinion is the same. Unfortunately, I am the victim of many hate crimes just walking around. At age 14 I moved back home so my mother could look after me properly. My dad passed away when I was 6 years old. His funeral took place right next to my grandparents' house. They were able to hold my grandpa in the back and watch him die together with my mom. My grandmother got to be the rock that held my family together and I saw she really cared about me. After I moved out my mother was over 60 years old at this point and she didn't know how to cook. I told her to teach me how to cook and soon enough she taught me right before Thanksgiving 2014. It was just five minutes a day and then I started to show interest in food.
We got married in April 2015 and I have 3 children. The kids are 8, 10, and 12. We all get along great. He is my son, but I also have a daughter. A long distance daughter in law. Since March 2016 my mother has been having health problems so it doesn't seem like he needs me often. He is 17 years old, so he always has his mother somewhere around.
Our sons have siblings and our daughters have brothers and sisters. As well as my girlfriend who is 18 years old. We are close knit family, and we usually see each other every summer. This means that whenever I cook something for my family it is always for my husband. Sometimes it is for other family members and even though sometimes I can get bored with cleaning so well I tend to just leave dinner on my plate or make a quick dessert and eat that. It just gives me a little bit more time to spend on myself. I try to cook as much as I can. For example I make sure I make a lot of fruit salad. I cook lots of chicken pastas and casseroles. I have tons of eggs, pancakes, and brownies. Once in a while I'll make pasta with beef. Usually I prepare meatloaf and bake in the oven. There are not many things I cook that aren't eaten by others. Most of the meals I cook are those things that are leftover from Christmas, Easter, Labor Day, Easter, Fourth Friday Night Dinner, and many more. My favorites and best dishes are the spaghetti, cornbread, pot pie, beef stew, chicken tenders, scrambled eggs, lasagna, mac 'n' cheese, fish, and chicken. All those foods are something I enjoy making. There is one exception of course. I love to cook and I love it, whether it's food that I eat for breakfast, lunch, supper, or snack or even dinner. My first wife and I grew up in Philadelphia where we used to live. Her family would dine on Chinese food almost everyday. Whenever we'd make it to a restaurant, there was always a table out front with three different kinds of food. Now some of it is pretty basic and quite simple like hot dogs, burgers, soda pops. Some of it is stuff I never would have ever imagined growing up. I always loved being creative and using ingredients I already had on hand. When she cooks she takes a bunch of items and adds them into a big pot, mixes it all together, and then lets them simmer or boil on the stove for hours. While I still remember cooking I used to think "what if?" But when she taught me I started to see what she's doing. Soon enough I was noticing everything she did that I can learn. When I learned to cook I stopped counting calories so much. Every meal is delicious because it's made with different ingredients that I already had on hand. When my wife calls me and asks me what I like to eat today or what I'm feeling hungry for right now, it tells me I get a chance to share with her what I like so well about us as a family. I appreciate her taking the time. And I try to do the same thing for her. For me it's all about sharing. It's nice to hear she's enjoying what you are doing too. I think I'm doing pretty good for my job and being able to give back to my community and maybe some others in need. I love making and eating all kinds of foods.
